Nailed it. Yup, I freaking own this recipe and damn is it good! It’s sweet without added sugar, gooey, cinnamon and anise flavoured. And it might introduce some of you Paleo Newbies to the joys of a slow cooker.

Linda and I grew up with the ‘crock pot’ but it’s the same thing as the current ‘slow cooker’.
Slow cooking is normally done during the cooler weather. But why shouldn’t I take advantage of the mega quantities obtained in my new 7 litre Breville? I gotta make leftovers or no one gets fed.
If you are concerned about it bringing extra heat in your house during the summer, it was suggested that you place your slow cooker on your porch while it does its magic. I got no idea how to protect it from rabid wildlife (Denver’s gangsta squirrels and Perth’s feral cats come to mind) but I’m sure you’ll figure it out. I think it’s a silly thing to worry about, really.
Final suggestion: I’ve created this for a 7 litre slow cooker. If you have a smaller version, just 1/2 the quantities.

Serves 4 for 2-3 days!
2 Tbs Coconut oil
3-4 kg Chicken thighs, skinless (it’s ok…fry skin another dish)
3/4 C Coconut aminos (check Nature Pacific)
3/4 C Shao hsing or Chinese cooking wine (can substitute with organic cider vinegar)
4 cloves Garlic, minced
Thumb sized piece Ginger, minced
2 Tbs 5 Spice powder
2 tsp Sesame oil
1 Sweet Potato, medium sized and cubed
3 Tbs Tapioca flour
1/4 C water
Scallions and chilli for garnish
ADD Coconut oil to large fry pan.
FRY and brown the thighs in batches.
PLACE sweet potato and remaining Ingredients 1 to slowcooker. Mix everything thoroughly.
ADD & LAYER all thighs in the slowcooker. Be sure to also add any of the juices that might have escaped from the thighs while they rested. That’s gold!
PLONK on the lid, flip the switch to High for 4 hours or Low for 6 hours.
WHEN done, mix the tapioca flour into the water and stir through the cooked meat to make the incredible gooey sauce even gooey-er.
SERVE with a bit of sliced scallion and chilli if you want the heat. We also like it with quinoa instead of non-Paleo rice.
