Found out about these Puerto Rican/ South American/ Caribbean treats from Linda’s hubby Eric after he came back from a visit to Florida. He said ours were way better than the ones he had on his trip…of course they were!

Fry pan
Wide spatula
Can (to smash the cooked plantains)

2-3 medium plantains
Coconut oil
Salt and pepper to taste

HEAT oil in pan.
PEEL the plantains and cut into 1″ thick disks.
FRY plantains, about 2 minutes per side.
DRAIN fried plantains.
SMASH the plantain using your can.
REFRY the flattened plantain.
PLACE tostones on paper to drain.
SPRINKLE with salt and pepper.

Serve as an appetiser or we suggest as an accompaniment with BBQ meats or other veg.
