It can’t be good for you if it doesn’t look good and taste equally exciting. And this salad is so pretty, you won’t want to eat it right away…Or at least you’ll get some “oohs and aahs” before skarffing this down.
The tartness of the lime and Granny Smith apples is balanced by the sweetness of the dressing and the crunchy, spicy bite of the ruby-jewelled radishes. Serve it with an ice cold beverage as the perfect summer salad, or accompanying any meat or fish for a reminder of warmer times when winter settles in.

She’s been posting me pics of all the very cool summery food they are eating over there. So it only seemed fair to share the healthy Summer Love.
2 Granny Smith apples
2-4 Radishes, red
1 Lime, juiced
Sea salt and white pepper
CLEAN and slice the apples and radishes into slices. Please do not peel them; it detracts from the look and you lose the nutrition in the peels.
SPLASH a bit of lime juice on the salad and give it a good stir with your hands so the juice coats the bits without swamping it. I doubt you’ll use all of the juice…maybe drop the remaining into your tequila!
SPRINKLE a bit of the sea salt and grind some pepper on to the salad, giving it a final stir. By the way, if you don’t have white pepper, use black. I found the black pepper made this pretty salad look like bugs had invaded it, so it’s really just a personal taste ‘thang.
1. If you REALLY wanna ramp up the summer ‘kick’ in this, dice up a bit of jalapeno and throw it in the mix. Woohoo…great with tacos!
2. As long as you’re not lactose intolerant, put a few parmesan slivers on the salad.
