NO-BAKE CHRISTMAS CRACKLE SLICE™

Just cuz it’s sweet, doesn’t mean you can’t pack a dessert with nutritious goodness. This one has lots of my favorite, healthy snacks in one place, and is freaking easy to make. Plus you can substitute any nuts and dried fruits you have on hand so ya got none of those “I-don’t-have-that-in-my-kitchen” excuses: Think of it as the Pizza of Desserts!

Saying that, try to use hazelnuts if you can. It’s a traditional Christmas nut. They are rich in protein and unsaturated fat, with gobs of thiamine and B6 as well as other B-vitamins. Great sources of energy; their 60.5% fat content is primarily oleic acid. I use raw nuts and recommend you do the same.

INGREDIENTS
90g Puffed Brown Rice Cereal
2-3 handfuls Dried cherries or cranberries
2 handfuls Hazelnuts, chopped
1 handful Coconut, shredded finely
1 Tbs Cinnamon
1 Tbs Cocao, powder (no sugar)
1 tsp Sea Salt
1.5 C Coconut oil
1.5 C Molasses

PREPARATION
MIX all dry ingredients together in a large mixing bowl.
MEASURE out the oil and molasses into a glass bowl or measuring cup.
HEAT the oil and molasses for 20-30 secs in a microwave if the oil is hardened.
POUR the wet ingredients into the dry and mix thoroughly.
PRESS the slice mix firmly into a glass baking dish or lined brownie pans. Or drop mix into paper muffin cups; they make pretty gift parcels.
REFRIGERATE for at least 15 minutes or until the coconut oil has set.
CUT into squares. Serve with a glass of red wine, mulled cider, coffee or tea.
