Seriously easy recipe inspired by one of my clients’ daughters. Jayne has been listening to me crap on about Paleo cooking and thought this fit into the 3.TWO.1 philosophy of easy, fast, nutrient-dense food. She’s right on the money!
It’s super duper easy to increase or decrease the size of the recipe based on what you have available: Use a 1-1 ratio for rolled oats and bananas. If you have 1 banana, use 1 cup rolled oats. If you have 2 bananas, use 2 cups rolled oats, etc.
The original recipe called for rolled oats which contain gluten and so aren’t in the strictly-Paleo pantry. If that’s not an issue for you (hell, sometimes I just gotta have a bowl of penne pasta), substitute the quinoa flakes with the oats.
3 Cups Quinoa flakes
1 Tbs Cinnamon
1 Tbs Maple syrup (not necessary, though)
Suggested add-ins: cocoa nibs, chopped raw nuts, dried fruit
PREHEAT oven to 180 C / 350 F.
GREASE cookie sheets or place foil on cookie sheets and spray with non-stick spray.
PEEL bananas and place in large bowl.
ADD quinoa flakes.
USE hands to mash bananas and flakes together until mixed well.
MIX in desired add-ins .
FORM cookies to preferred size and space out on cookie sheet.
BAKE for 15 minutes in the oven.
