These are by far the simplest cookies I’ve ever made. They are fool-proof and taste sensational.
You can substitute macadamias for the cashews. Add more cinnamon and chipotle chili for a Southwestern taste.
1 C Cashews, raw
1 C Medjool Dates, pitted
1-2 Tbls Cocoa powder
1 tsp Cinnamon, ground
PREHEAT oven 180 C / 350 F
PLACE all ingredients in a food processor or Thermomix and blitz until completely combined.
ROLL the dough into small 1″ balls, flatten slightly between hands and place on a lined baking sheet.
BAKE 15 minutes on top shelf. Watch they don’t burn on the bottom.
REMOVE from oven and cool before eating and storing.
Makes 10-12 cookies
