TURKEY MINT LETTUCE CUPS

As with most of the recipes I create (ie. stumble upon), they seem to arise out of intense hunger. The story goes like this: I need lunch. While rummaging in the frig I found: raw ground turkey, mint and Bibb lettuce. Hmm. Since we use lettuce cups as the vehicle of choice in the Paleo world, I decided a turkey something would be perfect. Uh, because that’s all I had. 🙂

 

Ingredients:

1 Tbsp. coconut oil

1/2 lb. ground turkey breast

20 fresh mint leaves, ripped

2 tsp. turmeric

1 tsp. cumin

Dash of cayenne pepper

Salt and pepper to taste

Boston Bibb lettuce leaves washed and spun dry

Directions:

Heat a skillet over medium high high heat.

Add oil and turkey; cook and stir for 3-4 minutes until beginning to brown.

Add mint, turmeric, cumin, cayenne, salt and pepper. Should start smelling good in a few seconds.

Continue to stir until turkey is cooked through.

Fill the lettuce leaf with a helping of the turkey and a big mint leaf.

Gobble, gobble!
