Waffles are the food of the gods. I totally associate Sundays with these..and bacon of course. Hoped every morning my mom would pull out her Old School waffle iron and make me some. We ate them hot and we ate them cold, topped with margarine and peanut butter. Is that so gross?! Well, I’m still alive. Do yourself a favor and choose something else to top it with!

Anyway, I’ve been trying out my new Christmas waffle iron! I can make two at a time! It flips on an axis to perfectly spread the batter on the iron and makes perfect. No, really perfect waffles in 3 minutes. I’ve adapted a basic Paleo waffle recipe to make them fabulous. You might like to try this as a pancake too.


1 C Almond flour
1/2 C Tapioca flour
2 Tbs Coconut flour
1 tsp Baking soda
1/2 tsp Salt
4 Eggs
1/3 C + 1 Tbs Coconut milk
2 Tbs Coconut oil or ghee, melted
1/2 tsp Vanilla extract
1 whole Vanilla bean, sliced lengthwise and scraped (discard pod)
1 tsp Cinnamon, ground

PREHEAT waffle iron.

COMBINE all ingredients and whisk until smooth.
**Vanilla bean scraping: Just place vanilla bean on a cutting board and slice it lengthwise. Use the back of your knife to scrape the pulp from inside the pod. Put into batter**

REST batter for 5 minutes so that it can thicken.

POUR batter into hot waffle iron. *Just enough batter  to barely cover the prongs in the iron.

COOK for 3 minutes and then top with maple syrup, freshly boiled fruit or jam!
