Another side dish for the holidays! This one is slightly sweet and addictive. You could also add ham, bacon, or shredded chicken and make a one pot meal. Or serve cold drizzled with a little apple cider vinegar. I’m planning on making a latke out of the remainders today- add an egg and a little almond flour, mix and fry it up in coconut oil until crisp. See the possibilities here?! Oh yeah and you’re going to use the shredder thingy on your food processor to shred everything. It’s SO fast and easy.
BUTTERNUT SQUASH AND GREEN APPLE HASH (serves 4-6)
1 medium butternut squash, peeled, seeded and shredded
1 large green apple (Granny Smith or Golden Delicious), cored and shredded
1 large red onion, peeled and shredded
2-3 Tbsp. oil
1 Tbsp. chopped fresh rosemary
Salt and pepper to taste
Grab your food processor and use the shredder attachment. Use a hand shredder if you have to. It would suck, though.
In the bowl of a food processor, shred the squash, apple and onion all at once.
Place a large wide skillet over medium high heat.
Add oil, shredded vegetables and spices.
Allow the mixture to cook awhile (this allows it to brown-stirring too much will only just cook the stuff) and then flip it using a spatula until well browned.
Adjust your seasoning.
Bam. Done. Food on the table.
P.S. Did this last night and my husband and I ate all but this. It’s good!! (double exclamation points)
